In special collaboration with Goose Island Brewery

Over the past six years, Bissell Maple Farm has built a relationship with Goose Island, combining Bissell Bourbon Barrel Aged Maple Syrup with Bourbon County Stout variant beers. Our syrup adds a unique and memorable flavor to each of these barrel aged beers: Proprietors 2015, Proprietors 2016 and Proprietors 2020.

Together we thought it made sense to flip the process and age maple syrup in used Bourbon County Stout barrels. The project produced a syrup with beautiful notes of bourbon, chocolate and oak, a complex and very distinct flavor.
